台式奶香芋泥月饼
食谱 Butter.Flour & Me
材料:
奶油 50克
糖粉 20克
糖浆 50克
低筋面粉 150克
奶粉 10克
苏打粉 1/4茶匙
蛋黄 1个
芋泥馅 500g
表层:蛋黄液 + 少许的鲜奶(搅拌均匀)
做法:
1)牛油放在室温中待软化后,加入糖粉及糖浆打至松发,再把蛋液分次加入后,打成牛油糊。
2)接着把面粉、奶粉和苏打粉过筛后,加入奶油糊中拌匀,即为面团。
3)把面团放在温室下松弛30分钟后,分割。
4)接着把馅料分成50g等份,搓圆。然后将饼皮包入莲蓉馅料100g,再放入月餅模内打印出花纹的月饼。
5)预热烤箱,以140-150℃烤约10分钟后取出,在月餅表面刷上蛋黄液,再继续烤约15分钟即可。
